🇫🇷J’ai essayé beaucoup de recettes de pain. J’ai modifié et fais quelques essais. Ça m’a pris des semaines pour trouver le bon équilibre des ingrédients et TAADAA… J’ai enfin trouvé la recette parfaite de ce pain oriental ? Pain marocain ? Pain berbère ou pain algérien ? Appelez-le comme vous le souhaitez ! On retrouve ce pain dans tout le grand Maghreb. En Algérie et au Maroc, il est présent sur toutes les tables et a tous les repas. La recette est très rapide. Vous allez être agréablement surpris par cette simplicité et cette rapidité de réalisation et surtout par cette texture soyeuse de ce pain.

Le pain est juste délicieux, il se conserve très bien. Je vais pouvoir me régaler avec un bon tajine, d’ailleurs, je vais de ce pat m’en préparer un 😋

Call it whatever you want! This bread is found throughout the great Maghreb. In Algeria and Morocco, it is present on all tables and at all meals. The recipe is very quick. You will be pleasantly surprised by this simplicity and speed of production and especially by this silky texture of this bread. 

The bread is just delicious, it keeps very well. I’ll be able to enjoy a good tagine, by the way, I’m going to prepare one for myself 😋

INGRÉDIENTS

  • 🇫🇷400 g de faine
  • 400 g de semoule fine
  • 50 ml d'huile
  • 1 cac de sucre
  • 1 cas de sel
  • 11 g de levure chimique
  • 11 g de levure instantanée
  • 250 ml d'eau
  • 100 ml de lait
  • 🇺🇸400 g of flour
  • 400 g fine semolina
  • 50 ml of oil
  • 1 tsp of sugar
  • 1 tbsp of salt
  • 11 g of baking powder
  • 11 g instant yeast
  • 250 ml of water
  • 100 ml milk

Instructions

Dans un premier temps, préparez le levain : versez la levure instantanée et le sucre dans le lait légèrement tiédi et laissez reposer 10 minutes. 

Dans la cuve du robot, versez le levain, la farine, la semoule, la levure chimique, le sel et un peu d'eau. Commencez à pétrir vitesse 1 du robot. 

Versez petit à petit l'eau et au bout de 5 minutes de pétrissage, augmentez la vitesse du pétrin. Le temps de pétrissage est de 20 minutes à peu près.

La pâte doit être souple et ne pas coller au doigt.

Retirez la pâte de la cuve et commencer à la travailler pour qu'elle puisse gagner en élasticité.

Puis formez une grosse boule et placez-la dans un cul de poule préalablement huilé.

Filmez le contenant et laissez reposer 1 h à 1 h 30.

Dégazez ensuite la pâte et former un boudin. Coupez 7 morceaux de 200 g chacun.

Formez-les en boule en rabattant les extrémités des morceaux de pâte au milieu.

Aplatir chaque boule à l'aide d'un rouleau et avec un couteau très tranchant fissurez franchement la pâte en dessinant une croix.

Laissez reposer 30 minutes.

Badigeonnez chaque pain d'un mélange œufs et sauce soja et enfournez à 190° pendants 20 minutes.

First, prepare the sourdough: pour the instant yeast and the sugar into the slightly warmed milk and leave to stand for 10 minutes.

In the robot bowl, pour the sourdough, flour, semolina, baking powder, salt and a little water. Start kneading speed 1 of the robot.

Gradually add the water and after 5 minutes of kneading, increase the speed of the kneader. The kneading time is approximately 20 minutes.

The dough should be flexible and not stick to the finger.

Remove the dough from the bowl and start working it so that it can gain elasticity.

Then form a large ball and place it in a previously oiled bowl.

Film the container and let stand 1 hour to 1 hour 30 minutes.

Then degas the dough and form a sausage. Cut 7 pieces of 200 g each.

Form them into a ball by folding the ends of the pieces of dough in the middle.

Flatten each ball using a roller and with a very sharp knife frankly crack the dough by drawing a cross.

Let stand 30 minutes.

Brush each bread with a mixture of eggs and soy sauce and bake at 190 ° for 20 minutes.

🇫🇷La sauce soja, c'est pour la couleur, mais ça marche aussi avec du café😉 🇺🇸Soy sauce is for the color, but it also works with coffee😉
